Allergy to nuts is one of the most common causes of anaphylaxis. In some cases, even minute amounts can trigger a serious reaction. The number of children suffering from allergy to peanuts is increasing.
Anaphylaxis is a rapid, potentially fatal reaction, the symptoms being those of an allergic reaction to which is added lowering blood pressure, shortness of breath, abdominal pain, inflammation of the tongue or larynx, diarrhea or vomiting and loss of consciousness.
Procedure for the detection of the presence of hazelnuts-allergen in food
In the laboratory, quantitative dosing of hazelnut allergen is performed by ELISA method.

According to the European Union legislation (Regulation 1169/2011) the following substances are defined that can cause allergies and which are mandatory to be labelled on food products:
